Strawberries and mango remind us of the joys of warmer days.  This dessert is full of vitamins and minerals due to its fresh combination.  Agar agar is a well-known food in Japan high in calcium and iron.  It is cooling, salty and energizing for the thyroid.  

Actions on the doshas: Balance Vata, increase Kapha & Pitta in excess.

Action on the mind: Rajasic.

Special quality: nourish Ojas


Agar agar strawberry jelly

serves 4


1 cup strawberry fruit

1/2 cup water

1 tbsp Agar agar flakes

1 cup diced mango or banana


Place the water and fruit into a sauce pan and heat on low flame for 5 mins.  

Mix in tablespoon agar agar and hand blend until smooth in the pan.  Keep heating for 1 min and turn off the flame and mix with a wooden spoon to see if its thickened as you take the spoon out.  Next add the fruit jelly to a glass and set in the fridge for 30 mins.  Add cut mango and or banana and serve.
