Fresh and tasteful cold soup for summer.  You can make this vegan without eggs if you prefer. 

The beets will increase ojas and create more sattva.

Beet and Cucumber Soup

serves 2


1 cup beets peeled and grated

2 cups cucumber peeled and grated

3 cup kefir

2 boiled eggs (optional)

2 tbsp maple syrup

2 tbsp fresh dill

2 tbsp mint minced

1/2 tsp powder ginger

Salt and pepper to taste

Spirulina sprinkled on top



Steam beets until tender.

Add salt to the cucumbers and let them sit for 10 mins on the side.

Boil and slice the eggs into quarters.

Place the kefir into a bowl and place the rest of the ingredients together.

Serve into bowls and garnish with sprouts and spirulina powder.
