These chilled nutty cheesecakes will leave your guests with a smile.  A very satisfying dessert for vata and pitta doshas, that will feel like a nourishing treat. 

Blueberry Cheesecake 

Filling

265g 1 3/4 cup cashews soaked in water for 8 hrs

1/2 lemon juice

1 tsp cinnamon

3/4 cup fresh blueberry

1/2 cup honey or maple syrup

 

Base

1 1/2 cup almonds

1 cup Medjool dates

1/2 tsp Himalayan salt

1 tbsp coconut oil

1/2 tsp ginger powder (optional)

 

Method

 

  1. Drain the cashews of water and place them in the food processor to blend with other filling
    ingredients. Blend altogether.
    2. For the base, use a clean food processor and place all the base ingredients in together. and
    Ppulse until it forms a dough.
    3. Use the base dough to fill a spring form cake tin or use a silicon mold.  Next, pour on the filling
    and refrigerate for 1 hour, or until solidly set.
    4. Keep one handful of the blueberries blueberry a side as you will use them to decorate your cake
    top. Place all the filling ingredients into a the clean blender and pulse until smooth.
    5. Pour the filling on top of the solidified base and decorate with the blueberries.
