These tender and tasty roasted beets feel like a jewel.  Very detoxifying and building for blood beets are in season this spring, this recipe will make sure you enjoy eating them.

Roasted Beets⁠

3 beets peeled⁠
2 tsp ghee⁠
Pinch of pink salt⁠
1/2 a leek⁠
Spring of thyme⁠
8 sage leaves⁠
1 tsp white sesame seeds⁠
1/2 cup water⁠

Preheat the oven to 170 degrees. ⁠
Peel and quarter the beets leaving a few inches of the stems, (peel right the way to the top of the beetroot).⁠
Place them in a dutch oven with 5 springs of thyme and 8 leaves of sage.⁠
Place the lid on top and cook for 20 minutes or until soft and tender.⁠
Meanwhile in a frying pan gently fry the leek with a drizzle of oil. Toss the leek over the beets are they are done and sprinkle with sesame seeds.
