Thyme & honey has special medicinal properties. When combined into this jam it contains added antioxidants and the best taste which lingers in the mouth. Antioxidants are important for neutralising the harmful free radicals in our bodies, and in doing so they help to defend against ageing and disease.
Strawberry Thyme Herbal Honey
Approx. makes 2 cups
1/2 cup dark honey
1 cup strawberries
2 Tbsp thyme
1 tbsp lemon juice and zest
Dice up the strawberries into quarters. Take the thyme leaves off the twiggy sprigs.
In a bowl combine all the other ingredients. Serve on toast or millet porridge.
