This recipe was so good the kids asked for it two days in a row!   In Autumn and at the change of season you may find yourself craving less food as digestion lowers. An alternative to rice is quinoa which is not a grain yet it's so nutritious.  Quinoa is a super food full of protein it has more calcium than milk and high fiber. Here is a great winter warmer using Quinoa.

Winter wonder quinoa

serves 4

 

1.5 cup of Quinoa
1tsp Paprika
1st Cinnamon powder
1tsp Turmeric powder
3 cups of boiling water
.5tsp Himalayan Salt

1 Sweet potatoes
2 Beets
Sprig of fresh Rosemary 
1tsp Curry powder
.5tsp Himalayan Salt
3tbsp Ghee

1 cup Shiitake Mushroom
1tsp Cumin powder
1tbsp Ghee
2 tsp Wholegrain mustard
2 tbsp Apple cider vinegar
3 tbs Roasted Almonds
Black pepper to taste

fresh herbs (optional)

 

Preheated oven at 170 degrees/340 Fahrenheit in a fan assisted oven.

1. Peel and cut the potatoes and beets into bite-size pieces and add to a glass oven dish.

2. Roast the vegetables coated in 2 tbsp ghee (or coconut oil if you are vegan) & curry powder and rosemary for 20 mins.

3. Cook the Quinoa by adding 1 tbsp ghee to a pan then placing the quinoa in with the water.  Add-in the paprika, cinnamon, and turmeric spices and salt.

4. Once they are cooked mix the veg with quinoa.  In a small bowl mix the mustard with the apple cider vinegar and pour over the quinoa and veggies.

5. Saute the mushrooms with ghee and cumin powder.

6. Add the mushrooms and stir into the quinoa. 

7. Add the nuts and garnish with coriander or parsley. Enjoy!
